Eat lunch at Melvina's for some great local seasonal fare. While we were filming, one of her farmers hand-delivered produce from just 2 miles away. The really fun thing about lunching at Melvina's is talking to all the regulars. People walk in the door with one hand the air to greet friends, neighbors, and the staff. It's just that sort of place. Something we may not have shown on camera is the fried chicken held in its own warming skillet. You'll see guys order fried chicken, meatloaf and catfish on the same plate. So much for the veggies (which are DEEElish).
I hope those desserts looked as good on camera as they tasted. The baked flan with creamed caramel top was my absolute favorite. I could have eaten a vat of it!! Though, it could be a toss up between that and the jalapeno cornbread as my favorite. It had the perfect balance between sweet, moist and crumble. True culinary artistry.
As promised, here is Miss Melvina's Mac&Cheese recipe (which is not even included in her cookbook!!).
Melvena’s Home-style Macaroni & Cheese
4 oz Macaroni Noodles, cooked and cooled
1 cup cheddar cheese, shredded
½ cup mozzarella, shredded
Spray an 8x8 baking dish and layer above ingredients.
1 cup heavy cream
1½ cups milk
½ teaspoon minced garlic
¼ teaspoon cayenne powder
4 eggs
Salt to taste
Whip together until frothy and pour over macaroni and cheese.
Bake 50-60 minutes in a 325 degree oven.
