Steph's Turkey Reuben Sandwich with Chow Chow
For 1 sandwich that easily feeds 2...
4-5 slices of brown sugar turkey (find it in the sandwich meat section of your grocer)
shredded swiss cheese or monterrey jack
2 slices of bakery sourdough bread
1/4-1/2 cup of Bellew's Market Chow Chow
2 tablespoons of thousand island dressing
1 tablespoon of salted butter
Spread thousand island dressing on one side of both slices of bread. Add turkey to bottom slice of bread and pile chow chow on top. Sprinkle good amount of cheese over the chow chow. Top with remaining sourdough slice.
Melt 1/2 pat of butter in a small skillet until just beginning to brown. Add sandwich, cover with lid and cook for 1 minute. Lift with a spatula to check for browness. Add second half of butter pat to skillet and let melt. Flip other side of sandwich into the pan. Give the sandwich is good press with your spatula to mush it together. Remove to a cutting board and let rest for a minute. Cut into triangle pieces and serve with Kettle Chips and sweet pickles.. what a treat! Yum.
